Spanish Chickpea & Spinach Stew

This classic Andalusian recipe is warm, comforting, and perfect for batch cooking.

Ingredients
  

  • 2 cans chickpeas
  • 4 cups fresh spinach
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • Salt & pepper

Method
 

  1. Sauté onions and garlic in olive oil for 3 minutes.
  2. Add paprika and cumin; cook 30 seconds.
  3. Add chickpeas and broth; simmer 10 minutes.
  4. Stir in spinach to wilt.

Notes

  • Add tomatoes for brightness.
  • Increase cumin for a deeper flavor.
  • Serve with crusty bread.
