Moroccan Chicken Tagine Meal Prep

Ingredients
  

  • 1.5 lbs chicken thighs
  • 1 onion, sliced
  • 2 carrots, sliced
  • 1 cup chickpeas
  • 1/2 cup dried apricots
  • 2 tbsp olive oil
  • tsp turmeric
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp ginger
  • 1 cup chicken broth

Method
 

  1. Brown chicken in olive oil.
  2. Add onions, carrots, and spices; cook 2 minutes.
  3. Add chickpeas, apricots, and broth; simmer 25 minutes.

Notes

  • Serve with couscous or rice.
  • Add olives for tang.
  • Use beef instead of chicken if preferred.
