Lentil & Feta Stuffed Peppers

A Greek-inspired vegetarian meal that’s filling and flavorful.

Ingredients
  

  • 4 bell peppers, halved
  • 2 cups cooked lentils
  • 1 cup cooked quinoa
  • 1/2 cup feta
  • 1 onion, diced
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp oregano

Method
 

  1. Sauté onions and garlic.
  2. Add lentils, quinoa, oregano, and mix.
  3. Stuff peppers and bake at 375°F for 25 minutes.
  4. Top with feta.

Notes

  • Vegan: use vegan feta.
  • Add spinach for extra greens.
  • Swap quinoa for rice.
