cooked lentils

cooked quinoa

feta

onion, diced

garlic cloves

olive oil

oregano
Method
Sauté onions and garlic.
Add lentils, quinoa, oregano, and mix.
Stuff peppers and bake at 375°F for 25 minutes.
Top with feta.
Notes
Vegan: use vegan feta.
Add spinach for extra greens.
Swap quinoa for rice.
