Method
- Rinse rice under cold water until clear.
- Heat olive oil in a pot and sauté garlic.
- Add rice and stir for 30 seconds.
- Pour in broth and bring to a boil.
- Reduce heat, cover, and simmer 15 minutes.
- Remove from heat and add lemon zest and juice.
- Fluff with a fork and season.
