Ingredients
  

  • 1 cup Long-grain white rice (or brown rice for extra fiber)
  • 2 cups Vegetable or chicken broth
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tbsp Olive oil
  • 1 clove Garlic, minced
  • Salt and black pepper to taste
  • Optional: fresh parsley or dill

Method
 

  1. Rinse rice under cold water until clear.
  2. Heat olive oil in a pot and sauté garlic.
  3. Add rice and stir for 30 seconds.
  4. Pour in broth and bring to a boil.
  5. Reduce heat, cover, and simmer 15 minutes.
  6. Remove from heat and add lemon zest and juice.
  7. Fluff with a fork and season.
