Ingredients
  

  • 1.5 lbs Boneless, skinless chicken breast, cut into bite-size pieces
  • 2 tbsp Extra-virgin olive oil (use avocado oil if needed)
  • 1 tsp Smoked paprika
  • 1 tsp Dried oregano
  • 1.5 tsp Garlic powder (or 2 fresh cloves, minced)
  • 1.5 tsp Sea salt, adjust to taste
  • 1/4 tsp Black pepper
  • 1 Red bell pepper, sliced
  • 1 Small yellow onion, sliced
  • 1.5 cups Cherry tomatoes, halved
  • 3 cups Fresh spinach
  • 1 tbsp Fresh lemon juice (optional but recommended)

Method
 

  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add chicken, season with paprika, oregano, salt, and pepper, and cook 5–6 minutes until browned.
  3. Stir in bell pepper and onion, cooking another 3–4 minutes until slightly softened.
  4. Add cherry tomatoes and cook until they blister and release juices.
  5. Fold in spinach and cook just until wilted.
  6. Finish with lemon juice, toss well, and remove from heat.
